Sweet Potato Muffin Recipe

2 1/2 cups Sweet Potato Pancake Mix (about 3 packages)
1 2/3 cups milk
2 eggs

Optional: Add pecans, blueberries or strawberries

1. Stir until smooth.
2. Pour batter into muffin pan.
3. Bake 18 to 22 minutes.

Makes about 12 muffins.

Sweet Potato Pancakes

You don't have to like sweet potatoes to love Sweet Potato Pancakes. Naturally sweet, yet low in fat and no cholesterol, they are rich in vitamins and minerals. Certified Heart Healthy by the American Heart Association.

You can enjoy great-tasting, heart-healthy sweet potato pancakes without any fuss. Just start with sweet potato pancake mix, add water and in minutes you're ready for a delicious treat.

Suggestions: Lightly oil griddle (before each pouring. Preheat griddle to 400 degrees. Blend together 1/2 cup Sweet Potato Pancake Mix and 1/3 cup water, preferably using a wire whisk. Pour 1/4 cup batter on griddle for each pancake. Bake on hot griddle for 2 minutes on each side.

Ingredients: bleached wheat flour enriched (niacin, reduced iron , thiamine mononitrate, riboflavin, folic acid), sweet potatoes, sugar, soy flour, partially hydrogenated soybean oil, leavening (sodium acid pyrosphosphate, sodium bicarbonate, monoclcium phosphate), artificial flavor, dextrose, buttermilk solids, salt, cinnamon, egg white, lecithin, non fat dry milk.
